Fermented with indigenous yeasts in oak barrels with no added sulphur. Aged for 12 months in oak barrels and 6 months in stainless steel tanks. Bottled lightly filtered.
Description
Bonnardot Hautes Côtes de Beaune En Cheignot is a white Burgundy wine from France made by the Domaine Bonnardot winery, exclusively from the Chardonnay grape variety.
The vineyard where the grapes for this wine are grown is at 440 metres above sea level, and they are on average 40 years old. It has been planted in a beautiful village called Orches, dominated by a 50-metre high cliff. The soils here are composed of clay, chalk and stones.
Winemaking
The grapes are harvested by hand at optimum ripeness. On arrival at the winery, they are carefully selected on the table. Then in the winery, the grapes are slowly and gently pressed into whole bunches. Fermentation takes place in barrels without sulphur and without added products.

Bonnardot Hautes Côtes de Beaune En Cheignot is a lively and invigorating white wine, dominated by fruity aromas, with a frank, mineral and fresh palate, which does not lack roundness. It has very good acidity, good body and citrus freshness.
