There is a trilogy of whites produced with grapes from the three classical white varieties grown in Rueda, but sold as Vino de la Tierra de Castilla León. The 2015 Bruto was produced with Palomino from ungrafted centenary vines that were semi-abandoned, and they are recovering them in the village of Alcazarén at 750 meters altitude. It fermented in two 300-liter oak barrels (in 2014 she also used four 16-liter glass demijohns) with indigenous yeasts and no additives at all. It matured under a veil of yeast, 'flor', for two years in barrel. It has a golden color, a little cloudy, and shows a nutty nose with some hints of mushrooms, closer to a Jura than a Sherry. But the effect of the 'flor' is quite subtle, the veil is quite thin and this is only the first trial. The palate is tasty, with a notable absence of fruit, a little austere, like the yeasts are eating the glycerin. Unfortunately only 400 bottles were produced and would be filled soon.
