Description
Anima Mundi Xarel-lo is a white wine that represents the essence and tradition of the Alt Penedés wine region. This wine comes from Xarel-lo, a variety indigenous to the region, specifically from the Vinya del Boet Vell, planted in 1978.
This vineyard is located in the property of Sant Sebastià dels Gorgs, an area with extremely calcareous soils and a loamy texture, which perfectly balances silts and sands. Moreover, it is important to highlight that this north-facing plot is cultivated following the principles of organic farming and the lunar cycles, which guarantees a top quality product and respect for the environment.
Elaboration
Anima Mundi Xarel-lo is pressed directly without skins or crushing. Fermentation is carried out with indigenous yeasts in old 500L French oak barrels and clay amphorae. After this process, the wine is aged for 6 months, without any movement until bottling. Furthermore, no sulphites are added during the process and it is not filtered, which guarantees an authentic and natural taste.
Taste
Anima Mundi Xarel-lo has a slightly cloudy golden yellow colour, reflecting its natural, unfiltered process. On the nose, it offers good intensity with notes of white fruit, apples and citrus, complemented by nuances of ageing. On the palate, the wine is glyceric and full-bodied, with a pleasant and flavoursome entry, culminating in a rich, vibrant and persistent acidity. This acidity lingers on the palate for a long time, making each sip invite the next with more enthusiasm and anticipation.
