Description
In the heart of the Côte de Beaune, Vincent Girardin has managed to capture the purest essence of Volnay with a precise, uncontrived eye. Coming from a family of winegrowers, Vincent Girardin took his own path from a young age, convinced that terroir wine in Burgundy should be a faithful mirror of the soil. Vincent Girardin Volnay 1er Cru Champans is a living testimony to that philosophy: a historic plot, facing east and southeast, where old BurgundyPinot Noir vines - some more than 60 years old - sink their roots in calcareous soils peppered with iron oxides, which stain the earth red and bring an incisive Burgundy minerality to the wine.
Winemaking
The vinification of Vincent Girardin Volnay 1er Cru Champagnes is manual and rigorous, with double selection: first in the vineyard, then in the cellar. Depending on the year, a portion of whole bunches is incorporated into the fermentation process. After cold maceration, fermentation takes place in stainless steel tanks with temperature control, pigeage and gentle pumping over. Ageing lasts 15 months in Burgundy oak barrels (30% new), where malolactic fermentation also takes place. It is not clarified and is only lightly filtered, respecting the purest expression of the wine.
Taste
Vincent Girardin Volnay 1er Cru Champans opens with a delicate nose of black cherry, raspberry and dried violets, with earthy and sweet spice nuances. On the palate, it is precise and elegant: crisp fruit is framed by fine tannins and vibrant acidity that lengthens the finish with tension and freshness. There is depth without weight, a serene energy that runs through the wine from start to finish. The minerality of the chalky soil is clearly perceptible, providing structure and a saline sensation that invites the next sip. A refined, soft-spoken and persistent Volnay Pinot Noir that reveals its character with patience and subtlety.
