Description
From the outset, Vincent Girardin 's philosophy has been clear: let the vineyard do the talking. In Chassagne-Montrachet, a commune famous for its whites, Girardin made a firm commitment to showcasing the elegance of reds made from Pinot Noir over 60 years old, planted on deep clay-limestone soils. A risky gamble at the time, but one that has resulted in a wine that embodies the nobility of the terroir and the patience of time. The vineyards, guided by Guyot pruning and worked with precision throughout the green season, deliver concentrated grapes, with a natural balance between fruit, acidity and mineral expression. The mild climate of the Côte de Beaune allows for slow ripening, giving this wine a subtle and complex structure.
Winemaking
Vincent Girardin Chassagne Montrachet Vieilles Vignes Rouge is harvested by hand, with rigorous selection in the field and then on the table. Depending on the quality of the vintage, a small proportion of whole bunches may be added. After a cold maceration of several days, fermentation takes place in stainless steel tanks, with temperature control, pumping over and gentle punching down. The wine is aged for 15 months in barrels, with 30% new oak, where it undergoes malolactic fermentation. Bottling is carried out without fining and with very light filtration, respecting the purity of the wine as much as possible.
Taste
Vincent Girardin Chassagne-Montrachet Vieilles Vignes Rouge shows a deep and bright red colour. Its nose offers an intense expression of fresh red fruits, cherry, raspberry, with floral notes and a very delicate spicy background. The palate is silky and precise, with fine tannins, good tension and a firm, long, slightly earthy and mineral finish. The oak is perfectly integrated. An authentic Burgundy red wine, with character and finesse, ideal to accompany grilled meats, terrines or cured cheeses.
