The 2017 La Mailloche Vin Jaune comes from the same terroir as the ouillé Chardonnay they bottle. It comes from degraded soils, from a 0.35-hectare plot of Chardonnay they purchased in 2009 and transformed to organic and biodynamic. Even though 2017 was a larger and more open vintage with higher ripeness, the wine still shows the delicacy, the freshness and the aging potential imparted by the Lias soils. Even the more invasive-aging sous voile let the terroir character come through in the wine; this is why Stéphane decided to start making terroir Vin Jaune. Description

Tissot Vin Jaune La Mailloche is an emblematic Jura wine produced by Bénédicte and Stéphane Tissot. This yellow wine(vin jaune) is made exclusively from Savagnin grapes sourced from a terroir of degraded compact clay and marl from the Lias, located on an east-facing slope. The estate is known for its biodynamic cultivation, certified by Demeter, and the grapes are harvested by hand at the end of October.

Winemaking

The winemaking of Tissot Vin Jaune La Mailloche involves spontaneous fermentation with native yeasts in 228-litre Burgundy oak barrels. For a minimum of 6 years and 3 months, the wine is aged without barrel filling, allowing a layer of flor to form on the surface that protects and nourishes the wine. Throughout the process, approximately one third of the total volume evaporates, concentrating the flavours and aromas of the wine.

Taste

Tissot Vin Jaune La Mailloche stands out for its complexity and longevity. On the nose, it presents aromas of nuts, accompanied by notes of baked apple, caramel, orange marmalade and coffee. On the palate, it is powerful and well-structured, with vibrant acidity providing a long, lingering finish. Distinctive flavours include white almond, wild green herbs and fine minerals. The combination of these elements creates a wine that, although it has the oxidative notes typical of a vin jaune, these do not mask the freshness of the wine, but complement it, resulting in a balanced and unique sensory experience.
