There is also a pink sparkler, the NV Crémant du Jura Rosé Extra Brut; 40% Pinot Noir and 30% each Poulssard and Trousseau. The Rosé is more complicated to make non-dosage, with the lees reduction. The nose is quite shy, but the palate has some more obvious flavors of red berries, and they are also amplified by the mousse and the acidity. It fills your palate, and it’s clean and tasty.

Winemaking
50% of the harvest is pressed directly and the other 50% is macerated with the skins. Fermented with indigenous yeasts and malolactic fermentation completed in stainless steel tanks and French oak barrels. End of fermentation in the bottle with a minimum ageing period of 16 months without final dosage (Brut Nature) nor added sulphur dioxide.
