Description
Rossignol-Trapet approaches this Savigny-Lès-Beaune Bas Liards with a deeply Burgundian philosophy: not to construct the wine, but to reveal it. The domaine, born of the union of two historic lineages from Gevrey Chambertin and now led by Nicolas and David Rossignol, has for years been committed to certified organic and biodynamic viticulture. That choice, made when it was by no means the easy path, speaks volumes about their character: here, they cultivate the land with conviction, patience and absolute faith in the soil. Bas Liards comes from a tiny plot, barely 0.25 hectares, planted in 1977, from which very few bottles are produced. The grape variety is Pinot Noir, of course, and the terroir leaves its mark clearly. Savigny-lès-Beaune, in the Côte de Beaune, tends to produce reds that are more refined than muscular, focusing more on nuance than on body. The soils—a mix of limestone, clay and alluvial deposits—combined with Burgundy’s continental climate, favour a slow ripening process and a taut, fragrant and precise expression.
Winemaking
The winemaking process for Rossignol Trapet Savigny-Lès-Beaune Bas Liards follows this same philosophy of restraint and purity. The grapes come from a plot tended with the utmost care, and the winemaking is geared towards preserving the vineyard’s character above any invasive technical intervention. Alcoholic fermentation takes place with 50 per cent of the stems left in, a crucial detail for understanding the wine’s structure, its vigour and that spicy edge that runs through the fruit. The wine is then aged for 14 months in French oak barrels, with just 10 per cent new oak, so that the ageing process does not dominate, but rather complements, refines and brings out the wine’s character. Everything seems designed to keep the identity of this small climat intact: transparency, freshness and an unadorned finesse right through to bottling.
Taste
In the glass,Rossignol Trapet Savigny-Lès-Beaune Bas Liards appears with a vivid, clear ruby colour, and from the very first moment reveals its character: red cherry, raspberry, a hint of ripe strawberry, a touch of bramble, pepper, dried herbs and a barely perceptible smoky undertone. It seeks neither exuberance nor sweetness, but precision. On the palate, it is silky, delicate and almost ethereal at first, but immediately tightens and lengthens. Crisp red fruit, fresh acidity and fine tannins come together to create a juicy, elegant and quietly serious Burgundy Pinot Noir, with a clean, spicy and persistently Burgundian finish.
