Description
Pierre Gimonnet Cuvée Fleuron is one of the most outstanding jewels of the renowned winemaker Pierre Gimonnet & Fils, a historic winery renowned for its dedication to Blanc de Blancs. This cuvée is a reflection of the house's best millésimes, where the use of reserve wines is not necessary to achieve its characteristic balance. It is made exclusively from 100% Chardonnay grapes from the prestigious vineyards of the Côte des Blancs, in a blend comprising 75.5% Grands Crus and 24.5% Cuis 1er Cru. The key vineyards are Cramant, Chouilly and Cuis, renowned for their freshness and minerality.
Winemaking
The soils of these vineyards are predominantly calcareous, which gives the champagne a remarkable minerality and freshness. As for the winemaking process, the grapes are harvested by hand, followed by fractional pressing and temperature-controlled alcoholic fermentation. Malolactic fermentation is carried out to soften the acidity and the wine is aged on the lees for more than 4 years, adding complexity and elegance. The dosage is 4 g/L, which places it in the extra brut category, offering a dry but balanced champagne.
Taste
Pierre Gimonnet Cuvée Fleuron 1er Cru is a wine characterised by its incredible freshness and balance. On the nose, aromas of ripe apple, sweet fruits and fruitcake stand out. On the palate, notes of brioche, lime and green apple emerge, complemented by a touch of yeast. Despite its youth, this is a champagne that already shows good structure, although its complexity is expected to increase with time. The finish is long, fresh and persistent, marked by a strong minerality reminiscent of the chalky soils of the Côte des Blancs.
