Direct pressing with 90% of the grapes destemmed. Free-run fermented in stainless steel tanks with indigenous yeasts and 10% of skins for 3 weeks. Aged for 11 months in stainless steel tanks, 400-litre French oak barrels and 225-litre earthenware jars.
Description
Makatzak Wild Wines brings us Narrasti, a txakoli that breaks with convention. Its name, which in Basque means "reptile", already gives us a clue as to its character: lively, agile and with an identity that mutates with time. This wine was born in the Sorgintxulo vineyard in Aia (Gipuzkoa), an enclave where nature rules and viticulture is practised with an almost ritualistic sensitivity.
Makatzak Narrasti is made from 90% Hondarrabi Zuri and 10% Hondarrabi Zuri Zerratia, two indigenous varieties that reflect the essence of the Atlantic. These vines, planted on ungrafted vines, grow in a clayey and calcareous soil, with slate veins that provide an unmistakable minerality. In addition, the vineyard is worked according to biodynamic principles, respecting natural cycles and favouring biodiversity.
Winemaking
Makatzak Narrasti 's winemaking process is as meticulous as its philosophy. Ninety percent of the grapes are pressed directly and fermented spontaneously with their own indigenous yeasts at low temperatures. But here's the kicker: the remaining 10% ferments on the skins for three weeks, giving the wine a deeper structure. Ageing lasts 11 months and is divided between stainless steel tanks, a 400-litre French oak barrel and a 225-litre earthenware jar. A blend that adds layers of complexity without losing freshness.
Taste
From the first sip, Makatzak Narrasti wakes you up. It has that special combination of vibrant acidity and silky texture that only some whites achieve. On the nose, fresh citrus, white flowers and a saline touch that evokes the breeze of the Bay of Biscay. On the palate, the sensation is juicy, with a touch of tension and nerve, but without losing that balance that makes it so easy to drink. The finish is long, with a mineral echo that leaves you wanting another sip.
Makatzak Narrasti is not just any txakoli. It is a wine to be enjoyed unhurriedly, with friends, at a table where the conversation flows as well as the wine in the glasses. If you are looking for a white wine that surprises, that has history and character, this is it.
