Winemaking
The base of Jérôme Lefèvre Playing With Fire is 90% Meunier and 10% Pinot Noir, sourced from old vines in Essômes-sur-Marne, in the Vallée de la Marne. The land is steeped in history and carefully tended according to the principles of organic farming. The rich and varied soil brings complexity, while the climate provides freshness and character.
The magic happens in the cellar. Spontaneous fermentation in oak barrels, no added sulphites, no filters, no make-up. Just the wine, raw and real. And the best thing: no dosage, which means that its essence remains intact, with no added sugars to alter its personality.
