In the heart of the Penedès region, in Sant Sadurní d'Anoia, where the vineyards overlook the Mediterranean and the mountains of Montserrat stand watch from a distance, the Gramona family has been making sparkling wines for over 130 years, the living testimony of unparalleled patience. Founding member of Corpinnat, Gramona defends a viticulture based on the roots, with manual harvesting, long ageing and total commitment to the territory. Gramona Enoteca Brut Nature Gran Reserva is its crowning achievement, the ultimate expression of its philosophy: time, respect and territory.

It all begins with a radical decision: not to speed up the wine. In a world where the market demands immediacy, Gramona does exactly the opposite. It lets the wine speak at its own pace, without pressure. This cuvée comes from specific plots of Xarel.lo and Macabeo, cultivated under biodynamic principles, where the life of the soil is sacred and medicinal plants coexist with the vines. One day, Jaume and Xavier Gramona decided to go for extreme ageing, without adding expedition liqueur, without concessions to sweetness. This is how Gramona Enoteca Brut Nature Gran Reserva was born, with more than 12 years of ageing on the lees, in silence, in the dark, in the family cellar.

The clay-limestone soils of the Penedès, with marine fossil veins and a moderate altitude, impart a dry, precise, almost chalky minerality to the wine. The Mediterranean climate, with alternating warm days and cool nights, allows for a slow maturation, which maintains the tension and freshness necessary for a long life in the bottle.

Winemaking

The grapes are harvested by hand in small crates. Only the free-run juice -the first fraction of the pressing, the purest- is used. Fermentation is carried out with indigenous yeasts in stainless steel tanks at controlled temperatures.

Then, the base wine rests until the time of its second fermentation in the bottle, according to the traditional method. This is the beginning of an ageing process that breaks all the rules of time: between 10 and 15 years on its lees, in rhyme, without stirring. Each bottle is disgorged by hand, without the addition of expedition liqueur(Brut Nature). The wine is bottled as it has evolved, without make-up, without concessions, a pure reflection of terroir and time.

Taste

Gramona Enoteca Brut Nature Gran Reserva is presented with an astonishing first impression. The very fine, almost ethereal bubbles caress the palate with the delicacy of a whisper. Aromatically, it is a monument to complexity: dried fruits (almond, toasted hazelnut), fine bakery products, brioche, pastry cream, notes of beeswax and saline touches reminiscent of sea breeze and sun-warmed stones.

The palate is majestic. No exuberance, just precision. The palate is restrained, dry and tense. Notes of candied lemon peel, white tea, dried mushrooms, ripe apple, and a slight bitter finish reminiscent of quinine or green almonds. The acidity is fully integrated, but lively. It holds the wine like a firm silk thread. The finish is very long, almost meditative, with echoes of chalk, iodine, and a salinity that invites another sip.
