Description

Since its foundation, Fernando de Castilla has positioned itself as a custodian of time and tradition in Jerez. Under the vision of Fernando Andrada-Vanderwilde, the house is committed to rescuing classic methods and forgotten soleras to create authentic brandies, without artifice or concessions to the market. Fernando de Castilla Solera Reserva is born from the Palomino variety, grown in the chalky albariza soils of the Marco de Jerez, where the Atlantic breeze and the Andalusian sun forge a grape that is discreet but full of potential. A key decision by the team was to use exclusively holandas-the finest fraction of the distillation-rather than more aggressive eaux-de-vie, sacrificing volume for purity and elegance.

Winemaking

Fernando de Castilla Solera Reserva is made by low-temperature distillation, extracting only the heart of the wine, the most subtle and aromatic. It is aged by the traditional method of criaderas and soleras, in American oak casks filled with oloroso, which adds complexity without overshadowing the essence of the distillate. The process can take up to five years, but the real secret is in the blending: successive layers of time, wood and wine that merge in deep harmony.

Taste

Amber-coloured with mahogany highlights, Fernando de Castilla Solera Reserva opens on the nose with a delicately ripe expression: dried figs, candied orange peel, vanilla and a nutmeg background. On the palate, the entry is smooth and round, with a silky texture that is surprisingly balanced. It is not a heavy or sweet brandy: its profile is dry, elegant, with notes of toasted caramel, soft coffee and a slight noble bitterness reminiscent of old oak and generous wine. The finish is long, with echoes of dried fruits and spices that linger without harshness. It is a premium brandy for those seeking depth without ostentation, closer to the spirit of an aged wine than the ethyl punch of a common distillate. A restrained, mature and subtle work that honours the legacy of Jerez without needing to raise its voice.
