Description

Emilien Feneuil does not make Champagne to "please" first, but to tell the story of a place. When he returned to the family plots in Sermiers(Petite Montagne de Reims), he made an uncomfortable decision: to stop pushing the vines and start accompanying them. He planted ground covers, encouraged biodiversity and wanted each row to function as a small ecosystem. It is said that he got the idea after seeing mixed and living crops on a trip - a sustainable viticulture without mental straight lines - and since then his objective has been simple and radical: that the wine should have the pulse of the soil, not the make-up of the winery. Emilien Feneuil Cuvée Totum Premier Cru comes from Premier Cru vineyards in Champagne around Sermiers/Chamery, with limestone and marl footprint giving tension, salinity and a very "Reims" nerve but with a more herbal edge. In the blend, Chardonnay and the very rare Petit Meslier shine, a grape that acts like a scalpel here: electric acidity, vegetal freshness and precision.

Winemaking

Emilien Feneuil Cuvée Totum Premier Cru is handpicked. Gentle pressing and careful crushing. Fermentation with indigenous yeasts and ageing of the base wine in used barrels, seeking texture without "wood flavour". The wine rests for about 10-12 months before tirage and secondary fermentation in the bottle. The ageing on lees is long (around 48 months) and the disgorging comes with very low or no dosage(brut nature), so that the mineral structure is not artificially sweetened or rounded.

Taste

In Emilien Feneuil Cuvée Totum Premier Cru, the nose is purist: firm apple and white pear, lemon peel, lightly toasted rye bread and a discreet smoky trace, like rubbed flint. The bubbles are very fine, more cream than foam. The palate is dry, straight, with a chalky sensation that narrows the wine and stretches it at the same time. There are tense citrus notes, a touch of cold stone fruit, fennel and white herbs. With air it gains a subtle creaminess (old barrel butter, not sweet) and finishes long, saline, with fine bitterness that refreshes. Serious, sharp and deeply gastronomic Champagne.
