Description
The Elios project was born out of Jean Marc Dreyer 's unwavering commitment to viticulture that deeply respects the identity of the Alsatian soil. Convinced that Pinot Noir can express a greatness outside Burgundy, he opted from the outset for minimal intervention winemaking and a deep bond with his Rosheim vineyards, on clay and limestone soils. Dreyer is known for making bold choices: avoiding fining, minimising cellar intervention and relying on indigenous yeasts. One of his boldest choices was to allow certain wines to retain a slight natural turbidity, championing the idea of a "living" wine that evolves in the bottle, without filtering its essence.
Winemaking
The grapes that give life to Dreyer Elios Pinot Noir are harvested by hand and gently crushed. After a brief maceration, designed to extract fruit and freshness without excessive tannin, the must is transferred to a large wooden vat, where it rests for 11 months. This type of ageing adds volume without interfering with the dominant oak aromas. The wine is bottled without aggressive filtration, allowing it to retain its natural texture and vibrant energy. The result is a Pinot Noir with nerve, purity and a clean expression of Alsatian terroir.
Taste
Dreyer Elios Pinot Noir presents itself with a subtle but complex nose: crisp red cherry, fresh raspberry and an earthy background reminiscent of damp forest. Notes of fine leather, a light smoky touch and an enveloping minerality emerge. On the palate, the wine is light but firm, with an electric acidity that gives it tension and dynamism. The tannins are fine, barely perceptible, and the finish shows an echo of mild spice and tart fruit. This is not a fruity, complacent Pinot Noir, but one with a pure, vibrant, expressive profile that honestly reveals the soul of Alsace.
