The 2023 Wachenheim Village Riesling trocken is clear, light, pure and fresh on the bright and fragrant, almost a little greenish nose that offers green apple, gooseberry and lemon rind but also white peach aromas intertwined with coolish and slightly saline terroir notes. Not extraordinarily ripe but elegant, saline and with sur lie complexity, it is round and elegant on the palate. This is a full-bodied yet pure and filigreed, savory, persistently intense and structured Riesling with serious grip and tension. It is very long and intense and very promising, 12% stated alcohol. Screw-cap closure. Tasted at the domaine in January 2025.

Dr Bürklin Wolf sees Riesling as a faithful reflection of the landscape. Dr. Bürklin Wolf Wachenheim Village is sourced from the foothills of its Premier Cru vineyards and from younger plots on those same slopes in Wachenheim, in the heart of the Pfalz – a choice that speaks volumes about the estate: even its village wine must clearly reflect its origin. Here, everything revolves around Riesling and biodynamic viticulture aimed at preserving the identity of the terroir. In Wachenheim, this identity is rooted in red and yellow sandstone soils, capable of producing wines that are taut, straightforward and deeply mineral. The aim is not to create volume through artificial means, but to bottle a precise, dry and luminous expression of the terroir.

Winemaking

The winemaking process aims for purity and clarity. Harvesting is selective and carried out by hand, with yields of 50–55 hl/ha, seeking concentrated grapes without sacrificing finesse. Dr. Bürklin Wolf Wachenheim Riesling Village is sourced from classified plots in Wachenheim and from young vines in those same vineyards, thus combining vigour, freshness and mineral depth. Dr. Bürklin Wolf approaches this category with a philosophy of minimal intervention, allowing the vineyard to define the wine’s profile. The result is bottled at 12.5% vol., with 7 g/l acidity and 6.5 g/l residual sugar – parameters that underpin its dry, firm and vibrant balance.

Taste

In the glass, Dr. Bürklin Wolf Wachenheim Riesling Village does not seek to seduce with exuberant fruit, but rather with precision. The nose starts off serious, fresh, almost restrained, revealing stone rather than flesh. Notes of lemon zest , lime, green quince, apple and a hint of damp flint emerge, directly evoking the soil. Gradually, nuances of bergamot, delicate herbs and a faintly mentholated hint appear, always within a restrained and linear profile. On the palate, it is dry, sharp and vibrant, with a brilliant acidity that runs through the wine from start to finish. There are austere citrus notes, wet stone, a salty undertone and a chalky base that tightens the finish and lengthens it. It is neither broad nor easy-going; it is elegant, precise and food-friendly – one of those German white wines that cleanse the palate and leave a trail of persistent minerality. Beneath that discipline, however, lies a very measured yellow fruit that brings harmony and prevents any harshness.
