Description
The idea of making Domaine Vacheron Sancerre Rosé was born out of Jean-Dominique and Jean-Laurent Vacheron's radical commitment to their terroir. Located in the heart of the Loire Valley, Domaine Vacheron has been working exclusively biodynamically for years, guided by the conviction that only living agriculture can accurately translate the identity of its soils. For this rosé, the cousins decided to apply the same attention they devote to their coveted Sancerre whites, using 100% Pinot Noir grapes from plots grown on flint, limestone and marl soils. A decision that was seen as unusual at the time: to treat a rosé with the same seriousness as a grand cru. The continental climate, cool winds and marked thermal oscillation result in slow ripening, ideal for preserving acidity and mineral character.
Winemaking
The grapes for Domaine Vacheron Sancerre Rosé are harvested by hand in small crates to preserve the integrity of the fruit. They are then directly pressed, extracting a clear, pale salmon-coloured must. Fermentation is carried out with indigenous yeasts in stainless steel tanks, without the addition of sulphites in the early stages. The wine rests for a few months on its fine lees, without fining or filtering, in order to preserve its purity and aromatic depth.
Taste
On the nose Domaine Vacheron Sancerre Rosé unfolds with finesse: notes of wild raspberry, redcurrant and pink grapefruit, enveloped in a halo of chalk and white flower. On swirling, nuances of redcurrant leaf and white pepper emerge, with an almost marine background. The palate is dry, agile and vertical. The crisp acidity propels it forward with energy, but without losing its silky feel. In the mid-palate there is an echo of fresh Melon and stone fruit, which slowly fades into a long, saline and refreshing finish. This is not a rosé of complacency: it is taut, precise, a terroir rosé that demands attention. Ideal with raw fish, goat's cheese or simply watching the sunset.
