Description
In the heart of Sancerre, where the flint rock tears the surface with geological drama, Domaine Vacheron Sancerre Les Romains is born, a wine that seems to be extracted directly from the ground. The Vacheron family, now led by cousins Jean-Laurent and Jean-Dominique, has been taming these hillsides for generations with an uncompromising biodynamic philosophy. Their decision to vinify by parcels - a radical move in the 1990s - revealed the deep identity of their soils. The result is Les Romains, a 100% Sauvignon Blanc from a plot on pure flint, where the roots dig into the living rock to express an unfiltered minerality.
Winemaking
The harvest of Domaine Vacheron Sancerre Les Romains is manual and selective, respecting the integrity of the fruit as much as possible. The grapes ferment with indigenous yeasts in neutral French oak barrels, avoiding any aromatic make-up. Ageing takes between 10 and 12 months, on fine lees, in a precise mix of barrel and tank, depending on the vintage. There is no fining or filtering: the philosophy is one of minimum intervention for maximum transparency. The result is a wine that faithfully translates the language of the soil, without artifice.
Taste
Domaine Vacheron Sancerre Les Romains does not seek to seduce with exuberant fruit. On the contrary, it unfolds with restrained elegance: on the nose, notes of hot limestone, broken flint, cold smoke and sea salt. Then there are traces of taut citrus - white grapefruit, lemon zest - green apple and a faint flash of white flower, like acacia or honeysuckle. The attack on the palate is direct and straightforward: a precise acidity runs through the palate with nerve, accompanied by a sharp salinity and a texture reminiscent of wine carved in stone. The fruit, always restrained, gives way to minerality, which dominates the mid-palate and the long, dry, almost austere, but deeply expressive finish.
