Description
High up on the gentle slopes of Bouzeron, where marl, clay and limestone soils intertwine like strata of a millennia-old history, Aubert and Pamela de Villaine - yes, the Aubert de la Romanée-Conti - embarked on a silent but steadfast crusade: to restore the Aligoté Doré to its dignity. In a Burgundy dominated by the prestige of Chardonnay, their commitment to this ancestral variety was a declaration of principle. They not only cultivated it, they defended it until 1997, when they created the Bouzeron AOC, the only appellation dedicated exclusively to Aligoté. Today, Domaine De Villaine Aligoté Bouzeron is made up of 17 plots spread over 12.5 hectares, with vines between 65 and 115 years old, deeply rooted in a landscape that exudes tradition, rigour and finesse.
Winemaking
Each plot is vinified separately: the grapes are gently pressed in a pneumatic press and the must rests for 24 to 36 hours in stainless steel tanks. Then, Domaine De Villaine Aligoté Bouzeron is transferred to large oak vats (30-40 hl), where it ferments naturally and ages for 10 to 12 months. There is no bâtonnage unless the reduction requires it, and the only real intervention is the precise control of the temperature between 20 and 22 °C. The approach is minimalist, almost reverential, allowing the varietal purity and soil character to express themselves without make-up.
Taste
The nose of Domaine De Villaine Aligoté Bouzeron is subtle and precise: lemon zest, white flower, green apple, with a halo of almost saline minerality evoking wet stone and chalk. On the palate, the entry is straight and vibrant, with a linear acidity that stretches the wine along the palate. There is no fat, no excess; just tension, lightness and crystalline clarity. There are echoes of very subtle stone fruit, some green apricot, perhaps a faint hint of pear. The finish is dry, pure, with an elegant persistence marked by stone and precision. A wine for purists, and for those who seek the truth of Bouzeron terroir without ornamentation.
