Description
De Moor Chablis 1er Cru Mont de Milieu is a natural white wine made by Alice and Olivier De Moor in the AOC Chablis Premier Cru, Burgundy (France).
This exquisite wine is made from Chardonnay grapes from a vineyard called Mont du Milieu. There, in this terroir east of Chablis, the vines are cultivated organically on red clay soils, where no chemicals are used.
Winemaking
The grapes are harvested late and by hand in small crates to protect the condition of the grapes as much as possible. In the cellar, the grapes for the De Moor Chablis 1er Cru Mont de Milieu wine are destemmed and gently pressed for a long spontaneous fermentation with indigenous yeasts.
The wine is aged on its lees without batonnage or racking in barrels for a year or more. The wine is bottled without fining or filtering and a touch of sulphur is added to the wine.
This wine is released a year later than the other wines of the winery.

De Moor Chablis 1er Cru Mont de Milieu is a white wine with fruity aromas, herbal notes and mineral hints.
The palate is round and generous, balanced, with a crisp acidity, well-integrated ageing and a very seductive saline finish.
