This wine was born from a very particular harvest, because due to the bad weather that year, the quantity of grapes was very scarce and therefore the production was affected in the quantities that were expected to be marketed.
Its name is due to the fact that it was designed to be shared in taverns, as it represented an experience to be enjoyed in the best company and to taste a very exclusive drink.
Daterra Tabernario is the result of the manual harvesting of the grapes, which were originally destined for the Gavela, Erea and Azos wines. Before maceration, half of the harvest is destemmed, separating the herbaceous structure from the bunch.
Maceration is carried out by keeping the skins of the grapes, including pulp and skin. This process takes at least 10 days, until spontaneous fermentation is achieved, and is carried out in barrels made of chestnut, which have a capacity of 500 to 1000 litres.
The ageing of this wine takes 11 months and no filtering is applied.
The taste of Daterra Tabernario is similar to white fruits, with slight citric and mineral touches. On tasting, it is usually smooth and fruity with a lingering finish.
