Description
Alphonse Mellot Les Romains is an exceptional wine that reflects the rich winemaking tradition of the Sancerre region of France. This wine, made exclusively from Sauvignon Blanc, comes from a 1.9 hectare vineyard with a planting density of 9,000 to 10,000 vines per hectare. The terroir of this wine is unique, as it is located on a flint vein, right on a fault line that marks a vein of this mineral, which gives it distinctive characteristics.
Winemaking
The winemaking of Alphonse Mellot Les Romains follows organic and biodynamic viticulture practices, with deep respect for the environment and the authenticity of the terroir. Harvesting is carried out in small 25 kg crates to ensure the quality of each cluster. The bunches are then carefully selected and transported to the presses using a belt system, guaranteeing a delicate pressing.
Fermentation takes place 60% in new barrels, 20% in single wine barrels and 20% in double wine barrels, at temperatures ranging from 18 to 24°C. The wine then matures on fine lees with regular batonnages for a period that varies according to the vintage, generally 10 to 14 months.
Taste
Alphonse Mellot Les Romains is a true symphony of sensations. It is characterised by vibrant acidity and notes of lime and citrus. Tasting reveals layers of complex and rich flavours, with hints of white flowers, walnut oil, chalk, and a subtle marine touch. Its colour palette ranges from a pale yellow with flashes of emerald green, and on the palate, it is voluptuous, mingling flavours of quince, white currants and grapefruit. This wine is ideal with seafood, highlighting its freshness and mineral precision. With time, Les Romains promises to reveal even more breadth and depth.
