The 2024 P.F. is ungrafted Bobal ('P.F.' stands for 'pie franco' in the Spanish language and means 'ungrafted') that fermented with full clusters in 4,500-liter oak vats, where it matured for 10 months. It comes in at 13.5% alcohol, with a pH of 3.63 and 5.5 grams of acidity. This is somehow earthier and darker in character, complex and nuanced, serious, a little closed, showing the more austere profile of the year and the soils. This has nuance, complexity, depth and purity of flavors, with very good precision. This has the juiciness but with the concentration from the smaller bunches delivered by the ungrafted vines, with fine-grained, polished tannins. This is going to improve with time in bottle, which I think will be more in the direction of a Northern Rhône than a Burgundy. 12,000 bottles produced. It was bottled in July 2025.

Description
The Ponce Pie Franco wine, an exuberant creation of the Bodega Ponce winery, is presented as an exceptional red wine from the D.O. Manchuela. This wine, made from 100% Bobal grapes, comes from specific plots: P.F Lincha, P.F Olivares and P.F Gallo. These vines, approximately 85 years old, are planted on ungrafted vines, i.e. without rootstock, which gives them a unique authenticity and resistance. Located at an altitude of 850 metres, facing northwest, these vines benefit from a sandy soil and a Mediterranean climate with continental influence.
Winemaking
The viticulture applied is organic and biodynamic, with no soil enrichment or artificial irrigation. Minimal tillage is practised and cover crops are maintained to preserve the soil structure. The grapes are harvested by hand, respecting the natural cycle of the grapes. In the winery, each plot is vinified separately, using indigenous yeasts in 4,500 litre French oak vats. The wine then ages for 10 months in the same vats, without being clarified or filtered before bottling.
Taste
Ponce Pie Franco stands out for its intense and mineral aromatic profile, with a predominance of ripe forest fruits aromas and herbaceous notes such as rosemary and thyme. On the palate, it is lively, stony and mineral, with incipient depth and complexity. The tannins are soft and rounded, providing an elegant texture. It is best served at 16°C and is ideal with meats, stews and cheeses such as Manchego with almonds. This wine, suitable for vegans and vegetarians, is characterised by its balance, seriousness and subtle elegance, reflecting an evolution towards greater finesse compared to previous vintages.
