The cellar of François Saint Lô, a great star of natural wine, is located in Anjou (Loire, France). Originally from Normandy, he worked in different restaurants in Paris. Until one day he had the fixed idea of creating his own wines. And he succeeded. He has become a recognised powerhouse on the rise, considering that his first vintage was only in 2012.
François Saint Lô's vineyard
François spent a year training at the Montreuil-Bellay wine school, but they didn't talk about natural winemaking at the time. He learnt this knowledge after several trips in Europe, when he decided in favour of this style. He was apprenticed to Olivier Cousin, Baptiste Cousins' father, who passed on much of his knowledge to him. He then concentrated on creating the magical place: his vineyard. He works with horses on a few hectares that he owns. He managed to have his own production and people have been fascinated by this discovery.
His vineyard is a labyrinth of underground caves, an almost prehistoric cellar and an 18th century wine press. This young, and increasingly promising, winemaker farms a small amount of land, and therefore produces a very limited amount of fruit per hectare. For this reason, it can be very difficult to get hold of his bottles. Bottles that have the soul of a treasure.
Wines of François Saint Lô
His wines are transformative, easy to drink; described as a unique experience. Of course, he vinifies naturally and does not use sulphur in his preparations. François works with chenin, cabernet franc, Pineau d'Aunis grapes in the area he rents and also buys grapes from Grolleau and Gamay. For example, we can find the chenin blanc, Les Pouches Macération 2018, a wine with a marked deep and mineral style. Or their reserve red wine, Bois Guyon 2017, special for gift giving, with a mature and elegant style. Its alcoholic fermentation is spontaneous with indigenous yeasts and it is aged for 30 months in used barrels. Of course, it is bottled unclarified, unfiltered and without added sulphites. François Saint Lô, more and more at the top of the natural wine world.
