The NV Moscatel Promesa is produced from Moscatel grapes grown in Chipiona and aged in a solera system with an average age of four years. It is bottled with 237 grams of sugar and 17% alcohol. It shows a dark amber color and shows the younger side of Moscatel with a complex nose of orange rind, honeysuckle, chocolate, coffee, flowers and spices, with well integrated aromas. The palate shows a dense, compact wine, full of spices and balsamic flavors, with the orange notes coming back in the long finish, managing to keep some freshness. Drink 2013-2018.

Description
Founded in 1430, Valdespino is one of the oldest and most revered houses in the Jerez region. Over the centuries, it has remained faithful to an unwavering principle: excellence through time and tradition. Among its hidden treasures is Valdespino Moscatel Promesa, a wine born of the tenacity and vision to keep alive a pure and uncompromising expression of the Moscatel grape. Sourced exclusively from vineyards in Chipiona, next to the Atlantic, where fine sand and salty winds chisel the grape with an unmistakable character, this wine is a testament to the link between the vine, the coastal climate and centuries-old know-how.
Valdespino Moscatel Promesa does not seek to please with easy sweetness: it is a wine of character, which retains the natural voluptuousness of Moscatel but channels it with complexity and freshness. The winery took the risky decision to work only with the Chipiona grape harvest to preserve the authenticity of the terroir and, true to its philosophy, the wine does not seek volume or mass production, but fidelity to its origin.
Winemaking
The grapes, harvested at optimum ripeness, are gently pressed to extract the purest must. Fermentation is stopped naturally to preserve the residual sweetness, before being fortified to 17% alcohol. Subsequently, the wine enters a traditional system of dynamic ageing by soleras and criaderas, where Valdespino Moscatel Promesa ages for an average of four years in American oak barrels. During this process, the Moscatel develops aromatic layers that only time can give, integrating the sweetness with the oxidative complexity typical of the region.
Taste
To the eye, Valdespino Moscatel Promesa shows a deep dark amber hue with mahogany highlights. On the nose, it displays an intense and enveloping symphony: candied orange peel, orange blossom petals, bitter cocoa, roasted coffee, wilted flowers and a spicy echo reminiscent of incense and clove. No strident notes, but a harmonious richness that evolves in the glass.
On the palate, the entry is dense, almost opulent, but surprisingly balanced. The acidity is discreet but firm, supporting the 237 g/L of residual sugar without the wine becoming cloying. Citrus notes return, but now with a balsamic background and a persistence that never seems to end. Its long, spicy and slightly saline finish makes it an ideal wine to pair with nutty desserts, blue cheeses or even Moroccan cuisine.
