Description
Txomin Etxaniz did not arise from a passing fad, but from an almost stubborn loyalty to Getaria, one of the historic birthplaces of txakolí. The winery, with roots dating back to the 17th century, has managed to preserve tradition whilst at the same time driving it forward, playing a part in the modernisation of this Atlantic wine without betraying its essence. That balance between tradition and boldness perfectly encapsulates its philosophy. This white wine, made entirely from Ondarrabi Zuri grapes, comes from vineyards in Getaria, characterised by their proximity to the sea, constant humidity, cool climate and soils that give the wine a vibrant, briny and taut character. Here, the landscape is not merely a backdrop: it is inside the bottle.
Winemaking
The winemaking process at Txomin Etxaniz follows a very clear concept of purity. The grapes are harvested by hand in early October, with the aim of preserving all the freshness of the fruit. The white wine is then vinified at a controlled temperature in stainless steel tanks, without any influence from oak, to keep the varietal profile and expression of the terroir intact. The wine remains on its lees until bottling, a process that adds texture and a certain breadth on the palate, without detracting from its liveliness. The result is a white txakolí with 11% alcohol by volume, featuring fine natural bubbles and that slight effervescence so characteristic of the Txomin Etxaniz and Getariako Txakolina styles: incisive, clean and immensely refreshing.
Flavour
In the glass, Txomin Etxaniz displays a bright, lively greenish-yellow colour. The nose is precise and sharp: fresh citrus, crisp apple and a mineral undertone reminiscent of damp stone, a sea breeze and fine salt. It seeks not exuberance, but clarity. On the palate, it opens with immediate freshness, underpinned by a very pronounced Atlantic acidity that courses across the palate with tension and energy. The light effervescence adds an extra vibrancy, making the wine even more agile and food-friendly. The fruit is subtly balanced, ranging from lemon and green apple to a faint hint of white fruit, always enveloped in a salty sensation that lengthens the finish. It is a light yet complex Basque white wine: upright, pure, juicy and deeply coastal, very much in the style of Txomin Etxaniz.
