The 2007 Gewurztraminer Selection de Grains Nobles Hors Choix represents a cuvee designation that the Trimbachs also utilized in 1989 and 2000 for wine of near Esszencia-like richness. Essence of rose petal along with mirabelle preserves, mint candy, and brown spices on the nose are joined on a thickly-rich palate by honey, chocolate, and white raisin. Yet for all of its richness and gaudy, candied set of flavors, this preserves a juicy sense of leavening and refreshment in a finish of extraordinary persistence, its sweetness not in the least cloying. This should be a 50 year wine.

In the heart of Ribeauvillé, Trimbach has been honing the art of interpreting Gewürztraminer with a clarity and precision that verges on obsession for over three centuries. Trimbach Alsace Gewürztraminer Sélection De Grains Nobles Hors Choix is the result of an exceptional vintage and a courageous decision: to let the clusters reach their maximum expression under the influence of botrytis cinerea, that noble rot that transforms grapes into liquid gold. This is an even stricter selection within the SGN, only the purest, most concentrated bunches are admitted to this "Hors Choix" category. The grapes come from Alsace vineyards that combine marl, limestone and sandstone soils, where the dry, cool and long autumns allow for slow over-ripening. The climate, protected by the Vosges, offers unique conditions for making wines of longevity and deep character.
Winemaking
The grapes for the Trimbach Alsace Gewürztraminer Sélection De Grains Nobles Hors Choix are harvested by hand, berry by berry, in a meticulous and almost ceremonial process. After gentle pressing, the must ferments slowly in stainless steel tanks at a low temperature to preserve all the aromatic richness and finesse. Fermentation is either stopped naturally or controlled to maintain a high residual sugar level, balanced by vibrant acidity. No oak ageing is used: the wine is bottled after minimal fining to reflect the purity of the terroir and the nobility of the botrytis.
