Description
Thomas Perseval did not inherit just a few vineyards in Chamery(Premier Cru, Montagne de Reims): he inherited a peasant way of reading the land and distrusting shortcuts. The spark came after training abroad and returning with a courageous decision for Champagne: to work organically and by parcels of land, seeking to let the soil - limestone and clay depending on the slope - mark the character before the cellar. Chamery, with its cool climate and slow ripening, gives that rare blend of tension and depth that makes a rosé Champagne great when it is not made up. La Pucelle Rosé de Macération is born precisely from this: a rosé made from the skin, not from the blend, to capture the nerve of the vineyard. The base is associated with Meunier de Chamery, in a style that prefers the straight, mineral and dry to any gourmand gesture.
Winemaking
At Thomas Perseval La Pucelle Rosé de Macération, everything is designed to extract character without losing edge: 12 hours of pre-fermentation maceration and direct bleeding. Alcoholic fermentation with indigenous yeasts and ageing for 9 months in oak barrels, looking for texture and backbone, not wood perfume. Then comes Champagne in its purest form: a second fermentation in bottle with a minimum ageing of 32 months in rhyme, refining bubbles and complexity. It finishes without concessions: no final dosage (Brut Nature), so that the salinity and chalkiness of Chamery remain in the foreground.
Taste
In Thomas Perseval La Pucelle Rosé de Macération, the glass is not looking for "pretty pink": it is looking for seriousness. The first impact brings raspberry and wild strawberry, but then there is a sense of cold stone, of wet chalk, which contains the fruit and makes it sharper. There is an echo of dried flowers and a very fine spice, almost white pepper. The palate is pure tension: precise bubbles, lively acidity, a straight passage. There is no rounding sweetness; there is minerality, energy and a long, clean, slightly citric(pink grapefruit) and saline finish, as if the chalk were sticking to the palate.
