The 2017 Reserva Particular is the 40th release of this wine, a blend of 53% Macabeo and 47% Xarel.lo, where the Xarel.lo comes from vines planted in the 1950s and 1960s. It fermented and matured in barrel, and for the first time this year, they used organic must to provoke the second fermentation in bottle, where the wine matured under a cork stopper until it was hand-disgorged without freezing the neck. It's as classical as it gets, keeping the ideas from their grandfather, from slightly lower-altitude vineyards, so it has a little more volume and less verticality, with abundant yeasty/leesy notes, a hint of diesel, balsamic and Mediterranean with abundant aromatic herbs. It has energy in the palate, with abundant small bubbles that make it textured and with great freshness and a dry and chalky finish. This vintage should be released in the fall of 2025, with no less than 80 months in bottle with lees. I tasted one of the 5,473 numbered bottles that was disgorged in March 2025, a few days before I tasted it.

Description

The wine Reserva Particular Gran Reserva Brut Nature by Recaredo is a sparkling white wine, defined by experts as deep with mineral touches.
It has an intense straw yellow colour that simulates golden iridescence due to its striking brightness. It has very fine bubbles and denotes freshness with creamy textures.
This wine is made from Mediterranean fruits such as xarel-lo and macabeo, from old vineyards planted between 1950 and 1955.
It is a white wine that shows how special an evening or family gathering is, as every sip denotes the importance of preserving your identity.

Winemaking

In the elaboration of this wine, the minimum intervention of chemical products and the respect for the environment are taken into account. The process begins with a manual harvest, using small boxes to store the fruit.
The fermentation process takes place in oak barrels, and then the wine is aged for 185 months, using natural cork. This cork is ideal for preserving the sparkling characteristic of this particular drink.
Disgorging is carried out without freezing the neck of the bottle, respecting the professionalism of the artisan and the environment where it is carried out.

Taste

With the Reserva Particular Gran Reserva Brut Nature wine, you will first notice the presence of yeasts and smoked nuts. Then, a light floral background that denotes the freshness that characterises it, highlighting its smooth, well-integrated bubbles.
It also has tones of ripe citrus fruit and a constant bitterness and persistence on the palate.
