Description
Philine Isabelle Dolcetto d'Alba wine comes from Vigna Felice, Diano d'Alba, with Protected Designation of Origin (PDO) Dolcetto d'Alba, guaranteeing its authenticity and quality. Its intense red colour is a reflection of the grape variety from which it is made: Dolcetto. This variety is purchased directly from Luigi and Massimo Veglio, guaranteeing excellence in every single bunch.
Winemaking
The soil in which these grapes grow is calcareous marl, which gives the wine its unique characteristics. In addition, the vineyard is cultivated organically, with biodynamic efforts carried out by Philine itself, reflecting a commitment to sustainability and respect for nature.
Winemaking
The creation of this wine is in the cellars of Marta and Carlotta Rinaldi. The journey begins with the meticulous separation of the bunches of grapes, giving way to a natural fermentation accompanied by a maceration of the skins that lasts for twelve days. In the first stages of fermentation, the must is pumped over to wet the cap and, as the end of fermentation approaches, a delicate pigage is applied. The wine then undergoes malolactic fermentation and rests for seventeen months in stainless steel tanks. At the end of the fermentation process, the wine is bottled without fining or filtering. In relation to additives, a moderate dose of sulphur is introduced into the grapes on entry into the winery and during the winemaking process, reaching a total of around 40 mg/l of sulphur.

Philine Isabelle Dolcetto d'Alba is an explosion of flavours on the palate. Notes of red and sour cherry and wild berries stand out. Its earthy, juicy and fleshy character makes it a unique wine. In addition, it has a distinct, rough and well-defined wild life nuance, which makes it unmistakable. It is, without a doubt, a wine that makes those who seek authenticity and character in every glass fall in love with it.
