Description
Pedecastello Frizzante wine is an authentic expression of the territory of Belluno, Italy. Produced by the Alex Della Vecchia winery, this wine is the result of the love and passion for wine passed down through generations in Alex's family. The name "Pedecastello" comes from a street near Alex's home, which is surrounded entirely by majestic mountains. This wine is made from Pinot Noir.
Winemaking
Under a strong commitment to organic and biodynamic farming, the vines benefit from a diverse soil, with rocky surface layers followed by strata of clay, marl, mud, sand and conglomerates of calcareous and sandstone origin. In the winery, the aim is to maintain this natural philosophy, with the vision of establishing a "closed circle" system, where viticulture is complemented by animal husbandry and the cultivation of cereals and fruit.
To make this sparkling, racy, re-fermented rosé wine, the grapes are left to macerate with their skins overnight, then the vat is bled and the wine is gently pressed. The first spontaneous fermentation takes place in stainless steel tanks and, months later without any filtration or clarification, frozen must is added during bottling for a second fermentation following the ancestral col fondo method in a natural way.
Taste
Pedecastello Frizzante presents itself in the glass with a rosy colour and a fine , attractive head . The nose reveals aromas of red fruits and hints of violet. The palate is fresh and spontaneous, with a pleasantly saline taste. You can clearly perceive the mineral notes that the terroir has transmitted to the grapes. It is an ideal wine to enjoy on a summer evening in good company. We recommend pairing it with an assortment of cold meats or a delicious pizza.
