The white 2021 Blau Cru was produced with Malvasía de Sitges grapes from 25-year-old vines from a massal selection. It fermented with indigenous yeasts in stainless steel and matured with the lees that were stirred every 15 days for nine months, and it didn't go through malolactic fermentation. It has a deep golden color is a little cloudy. It has an amazing nose, with a savory feeling to it, and it reminds me of food, a wine for the table, with an herbal nose and hints of broth. It's weightless despite the 13.02% alcohol and has a pH of 3.08, reflecting the amazing freshness of the variety. It's amazing how expressive and nuanced these dry whites produced with Malvasía de Sitges grapes, a grape people tend to associate with sweet wines, are. It's a grape that is very complicated in the vineyard, prone to illnesses, greatly marked by the vintage, with low yields, much lower than Xarel.lo. The acidity makes the wines very long lived. 7,533 bottles produced. It was bottled in May 2022.
