The Paolo Scavino 2020 Barolo (with Enrico Scavino’s signature on the front of the bottle) has a handful of savory herbs, barbecue rub, ripe plum, sweet cherry and dried currant. There are notes of aniseed, but otherwise, the wine is quite broad-brushed, thick or husky on the mid-palate. It ends with balanced freshness. The blend borrows fruit from Rocche Moriondino, Vignolo, Pernanno, Terlo, Albarella, Vignane, San Bernardo, Cerretta and Bussia Vigna Fantini. It ages in oak casks for 22 months, and 50,000 bottles were made.

Description
Paolo Scavino Barolo is a wine that has a special value for the Scavino family and represents the history and tradition of blending different Barolo blends. Made with the Nebbiolo red variety, this Barolo comes from the best plots of seven estates. The diversity of soils, exposure and altitude characterise each of these small but very important terroirs. Unifying these diversities, the Barolo offers harmony and complexity with an overall character of the area.
Winemaking
The winemaking of this wine begins with a separate vinification. Destemming and light crushing are carried out. Maceration and alcoholic fermentation are carried out in temperature-controlled stainless steel tanks with indigenous yeasts. Malolactic fermentation takes place in oak barrels. Tartaric stabilisation occurs naturally during the winter at low temperatures. Each parcel of crus is kept separate and aged in neutral French oak barrels for 10 months and a further 12 months in large barrels. The final blend is the result of an additional selection in the cellar of the most outstanding parcels of the vintage. Before release, the wine spends approximately one year resting in stainless steel tanks and 10 months in bottle.
Taste
Paolo Scavino Barolo is ripe, complex and elegant. Notes of very ripe, liqueur-like black and red fruit stand out, as well as spicy and peppery notes of sweet paprika that evolve into meaty elements, rust, metallic notes, leafiness and moisture. On the palate, it feels elegant and ripe, with notes of ripe black fruit, especially in retronasal. Spicy spices, tobacco leaves, light and subtle animal touches and leather can also be perceived. Its flavour is very long and persistent.
