Description
Occhipinti Passo Nero is a manifestation of love and respect for the land, born of Arianna Occhipinti 's passion and courage to experiment and seek new paths. This wine is made mainly with the Nero d'Avola variety, cultivated at an altitude of 280 metres above sea level on medium consistency soils, coming from sub-apennine sands of calcareous nature. Farming is entirely organic, with no chemical intervention, and the vines are on average 15 years old. The pruning system used is Alberello, with a planting density of 6,500 vines per hectare.
Elaboration
The grapes are harvested at the beginning of October, and the wine undergoes a raisining process for the next 15 days. Fermentation is carried out with indigenous yeasts and a 7-day skin maceration. Finally, the wine is aged for 16 months in used 750-litre foudres and 6 months in the bottle without filtration.
Taste
Occhipinto Passo Nero has a mahogany red colour with ruby highlights. On the nose, it offers a medium intensity with aromas of ripe red fruit, dried figs and dried apricots, all on a honeyed background. On the palate, the entry is fresh, with excellent initial acidity. The texture is creamy, culminating in a dry finish with hints of orange peel and a long persistence.
