The white 2015 Ovni is produced with Pedro Ximénez grapes from the Montilla-Moriles appellation, an unfortified white wine from the albariza vineyards from Pérez-Barquero. 2015 was an average harvest, similar to 2014 and 2011. There's always a touch of flor, because the wineries are infected with yeast from years and years (as it happens in the Jura), and the wines always acquire a certain twang. It has good grip, and Montilla always had a little more volume and certain rusticity. When this wine was first released, I thought it was a Martian, and now the style is very much in fashion and feels very normal. No 2013 or 2014 were produced. 6,000 bottles produced.

Description
From the white lands of the Sierra de Montilla and Moriles, where the Pedro Ximénez vines sink their roots in fossilised limestone soils, a wine is born that breaks the mould without losing its soul. Navazos Ovni PX is the result of a shared vision between Equipo Navazos, Coalla and Bodegas Pérez Barquero: to show the purest, driest and most direct face of an Andalusian variety historically linked to sweetness or ageing under veil.
The idea was not accidental. After years of exploring the possibilities of the great Andalusia wines, the question arose: what if we captured Pedro Ximénez just at its optimum moment of ripeness, without overdoing it, without taking it to extremes? The result is this wine, made from grapes harvested when they reach 11-12% potential alcohol, where the balance between freshness, fruit and structure becomes ideal. In these historic vineyards, some Vidueño vines (around 10%) are blended with the PX, adding subtle nuances without stealing the limelight.
Winemaking
The vinification of Navazos Ovni PX follows a philosophy of minimal intervention. Only yolk must is used, the finest and most delicate, from a light pressing. Fermentation is carried out with indigenous yeasts, spontaneously, and the wine rests briefly -just a few months- in a combination of stainless steel tanks and cement vats, with hardly any veil formation. There is no wood, no aggressive filtering: the aim is to achieve the maximum expressiveness of the limestone terroir.
Taste
In the glass, Navazos Ovni PX is clean, almost ethereal, but with character. The aromas are reminiscent of fresh citrus, green apple, raw almond and a mineral note that evokes chalk and albero dust. On the palate, it is sharp and vibrant, with an acidity that tightens the drink from start to finish. Despite its lightness, there is a saline density, like a lingering marine echo. There is no excessive fruit, no aromatic make-up: just the nakedness of Pedro Ximénez at its most honest.
Designed to be drunk young and carefree, this wine offers a fresh look at the potential of Andalusia's white wines. Radical in its simplicity, profoundly authentic, it is an invitation to rediscover the south from another perspective: rawer, brighter, more lively.
