As they run out of 98 pretty quickly, they soon bottled a similar NV La Bota de Oloroso Bota NO 108, another butt from the same group, which has a more civilized nose, with hints of orange and somehow gentler (relatively speaking) and polished. Each barrel is different and the wines are so old, so this specific one seems to have a softer personality but is still pungent and powerful. These wines, as they are aged in Trebujena, cannot be labeled as sherry, but in the future that should change. They filled 1,200 half bottles in October 2021.

In the heart of Chiclana de la Frontera, where the Atlantic leaves its saline mark on every corner and the sun matures the patience of the old casks, hides one of the most radical and secret jewels of the Marco de Jerez. From a single butt of a very old solera that rests in the cellar of Chano Aragon, in Calle Olivo, comes La Bota de Oloroso 108 Bota NO. This wine, close to 90 years old, represents one of the most extreme and authentic peaks of Andalusian oxidative ageing, on a par with the great sacristías of Jerez, Sanlúcar or Montilla. Its exclusivity is total: just over 1,200 bottles have been bottled of this relic, marked with the dreaded "NO" which indicates that this butt is not to be touched, not to be refreshed, not to be blended. It is respected.

The Bota de Oloroso 108 Bota NO shares the spirit of previous editions such as No. 63 and the very rare 98, which during the pandemic revealed the soul of the best Olorosos from Chiclana. But the 108 goes further: it is pure intensity, with no frills or shortcuts. Chano, a man of the land and of time, recognised that this boot should not be part of the usual solera dynamics. He decided to preserve it, to leave it in its silence, allowing the wine to transform into its pure essence over the decades.

Winemaking

There is no such thing as modern winemaking. The Bota de Oloroso 108 Bota is not the result of contemporary techniques or oenology, but of extreme patience and slow evaporation. In a single butt, without refreshment for decades, the wine has been concentrating in dry extract, salinity and structure. Its purely oxidative ageing, without flor, has carved out a powerful, dry character, where the integrated alcohol (over 21%) acts as a support for a brilliant acidity and an almost mystical density. It is a wine that has survived the passage of time, not because of human control, but because of the courageous decision not to intervene.

Taste

Challenging from the first moment, La Bota de Oloroso 108 Bota is NOT an elegant punch. Deep aromas of bitter nuts, old leather, black tobacco, noble woods and hints of varnish and noble oxidation. On the palate, it is a lance: very dry, with enormous tension, classic bitterness, sharp acidity and an endless finish of coffee, brine and roasted nuts. This is not an easy-drinking wine, but a wine for contemplation, ideal with cured cheeses or powerful cured meats.
