Description
Since Benoît Marguet took the reins of the small family domaine in Bouzy, he has been quietly sparking a revolution in Champagne. Rooted in a radical biodynamic philosophy, Benoît has turned his Grand Cru vineyards - on the sunny southern slopes of the Montagne de Reims -into living sanctuaries where the reigning grape variety is Pinot Noir. The Marguet Bouzy Grand Cru cuvée, born in 2013, is a reflection of his vision: minimal intervention, maximum character. His decision to dispense with dosage altogether and work with indigenous yeasts and tiny doses of sulphur is not just a technical choice: it is a declaration of principle. A way of letting the Bouzy soil - that mixture of clay, limestone and deep chalk - speak freely.
Winemaking
Marguet Bouzy Grand Cru comes exclusively from old plots classified as Grand Cru in Bouzy. The chalky soils and southern orientation bring ripeness and tension at the same time. The grapes are harvested by hand, in small, carefully selected lots. Spontaneous fermentation is carried out with indigenous yeasts in barrels of different sizes, where the wine remains for 9 months, without additives or corrections. Marguet Bouzy Grand Cru then rests for more than 5 years on its lees in the bottle, refining in silence. Disgorgement is carried out with no added sugar (0 g/l), resulting in a pure, raw and transparent Brut Nature, which expresses the truth of the year and the place.
Taste
On the nose, Marguet Bouzy Grand Cru presents itself with restrained elegance: toasted bread, lemon zest, walnut and a faint trace of oxidised iron reminiscent of Bouzy's terroir. There are no sweet notes or facile perfume. Everything is in tension: austerity, precision and depth. On the palate, it is firm, dry and vertical. The bubbles are very fine, integrated, almost ethereal. The palate is direct, with a vibrant acidity reminiscent of ripe citrus fruits, green apple and a sharp salinity. The finish is long, structured, with an aftertaste of wet chalk and bitter almond.
Marguet Bouzy Grand Cru is a Champagne for drinkers who understand that beauty sometimes manifests itself in the most radical purity. Ideal for dishes with a delicate but intense texture: red tuna tartare, scallop sashimi or cured comté cheese.
