I tasted a recent bottling of the NV Manzanilla Pasada en Rama Pastora, bottled in 2022 (clearly written on the back label) and in the context of the younger Manzanillas they are releasing, with complexity, depth and age. It has some varnish and nutty aromas, taking it toward a Manzanilla Pasada in terms of complexity and depth. This is a great wine, with an average age of nine years. There are 10,000 bottles released per year, and every year is now specified on the back label.

Description
The sherry wine Manzanilla Pasada en Rama Pastora was the first Manzanilla bottled by the Barbadillo winery, which was launched to captivate the market 6 years after the start of its operations.
The one we are presenting on this occasion is a current version that after many years and experiences, its creators have decided to recover and bring to the market, maintaining the attributes that characterise it.
This wine is classified as an aged manzanilla with biological ageing of long periods of duration, which is born in the Solear soleras and is made from the processing of the Palomino grape. Its particular flavour and aroma have earned it the highest rating in the Decanter World Wine Awards.
Elaboration
Manzanilla Pasada en Rama Pastora sherry wine is made from 100% Palomino grapes, which, after being harvested using traditional techniques, are manually destemmed and the must is then extracted.
The ageing process is one of the elements that best characterises this manzanilla, and it follows the traditional system with which production began, with a resting period of 9 years.
