The NV Palo Cortado VORS, medium brown-colored, it is a little cloudy. The off-dry (if such thing is possible), perfumed nose is a mixture of old wood, hazelnuts, varnish and a touch of toffee. The pungent palate is intensely dry and sharp, with plenty of hazelnut and varnished wood flavors, ending with a mineral salty note. It has a gentle nose and a wild palate. Drink 2013-2016.

Description
Born from the astonishment and intuition of legendary winemaker Manuel Lozano, Lustau Palo Cortado V.O.R.S. is the result of a brave decision: to bottle the unexpected. During the review of old solera casks, Lozano discovered a group that evolved with its own personality, defying the rules. It was neither fino nor oloroso, but something in between and sublime: Palo Cortado. This wine comes exclusively from Palomino grapes grown in the white albariza soils of the Jerez-Xérès-Sherry DO, where the Atlantic climate tempered by westerly winds allows for slow ripening and vibrant acidity. The region has been perfecting the art of Jerez for centuries, but this wine represents one of its rarest and noblest expressions: barely 1% of the wines selected become Palo Cortado, and only a tiny fraction reach the average age certified by the Regulatory Council of over 30 years.
Winemaking
The production of Lustau Palo Cortado V.O.R.S. (Very Old Rare Sherry) begins with an early interrupted biological ageing, which gives way to a long oxidative ageing in American oak casks using the traditional system of criaderas and solera. For more than three decades, the wine rests in silence, developing a deep complexity and ethereal texture. The final selection is limited to a very small number of butts, bottled without fining or excessive filtering, thus preserving all its authenticity. Human intervention is kept to a minimum: time, wine and wood are allowed to speak.
Taste
Its dark amber colour with coppery highlights heralds an intense experience. On the nose, Lustau Palo Cortado V.O.R.S. unfolds slowly with deep aromas of walnut, hazelnut, orange peel, dry wood and salted caramel. Notes of incense, tobacco and saline touches envelop the whole with an almost spiritual elegance. On the palate, Lustau Palo Cortado V.O.R.S. is dry, sharp and enveloping, with a silky texture and a tense acidity that balances its concentration. Notes of dried fruit, roasted coffee, mild spices and a slight hint of bitter toffee return. The finish is endless, with echoes of salt, noble woods and lingering umami. It does not seek to please, but to provoke, challenge and excite. A wine of meditation, ideal to accompany cured cheeses, Iberian ham, Asian cuisine or simply silence.
