The NV Amontillado VORS is a huge step up in quality and complexity from the rest of Amontillados. Bright brown color, extremely saline in the palate, sharp as a knife. One has to wonder if in the past the origin of this wine could have been Manzanilla rather than Fino. It is clean with a complex nose of curry, old wood, wax, antique shop and shoe polish as well as an extremely concentrated palate. Drink 2013-2021.

Description
In the heart of Jerez, between patios of albero and walls that breathe salt, Bodegas Lustau decided to take a bold step: to select eight forgotten casks in its Sacristía to create a wine that would speak, without filters, of time, wood and memory. Thus was born Lustau Amontillado V.O.R.S., a wine that has rested in silence for more than three decades and that today emerges as a testimony to an unrepeatable tradition. The decision to bottle it without concessions, without fining or stabilisation, was more than a technical choice: it was a declaration of principles. Made exclusively from Palomino grapes, grown on albariza soils that shine like salt under the Andalusian sun, this amontillado from Jerez synthesises the soul of the Jerez-Xérès Sherry D.O., where the winds of the Poniente and Levante chisel out the character of each butt.
Winemaking
The grapes are initially fermented in steel tanks, and the cuvée is then aged for several years under a veil of flor. The veil is then dissipated and the wine enters a slow oxidative ageing process that can last for more than 30 years in the solera system. This double life - first alive, then exposed to oxygen - is what gives Lustau Amontillado V.O.R.S. its dual character: ethereal and profound at the same time. The V.O.R.S. ("Very Old Rare Sherry") seal guarantees not only the minimum age of three decades, but also the authenticity of its provenance. The bottling, straight from the cask, may show natural sediment, proof of its purity. The editions are limited, and each bottle is almost an act of liquid archaeology.
Taste
Dark amber in colour, with golden highlights, Lustau Amontillado V.O.R.S. displays a symphony of aromas on the nose: toasted walnut, antique varnish, leather, beeswax, candied orange and a saline, almost marine twinge. It is dry, elegant and concentrated. On the palate, the entry is incisive, dry, with a vibrant acidity that supports the weight of the wine. Notes of bitter almond, salty toffee, mild spices such as clove and curry, and a noble bitterness reminiscent of dried herbs. The texture is enveloping but sharp, like velvet on stone. The finish is very long, saline, almost meditative, leaving an echo of dried fruits, noble woods and a freshness that is surprising for its age. A wine to drink without haste, ideal with Iberian ham, old cheese or simply in silence, letting time speak.
