Description
The story of Louis Jadot Pommard was born out of the pioneering spirit of the maison Louis Jadot, who chose to show the more serious and structured face of Pinot Noir in the Côte de Beaune, choosing the commune of Pommard as its emblem. Located between Beaune and Volnay, Pommard is renowned for producing only red wines of great character, on clay-limestone soils that give the grapes tension, depth and a marked mineral identity. The east and south-east facing slopes, bathed by the morning sun, offer slow and precise ripening. In a particularly rainy vintage, when many producers chose to wait, Louis Jadot 's team decided to harvest by hand, in small crates, to preserve the balance of the fruit. This determination, this respect for the vineyard even in adverse conditions, defines the philosophy of this wine: authenticity without compromise.
Winemaking
The Pinot Noir grapes destined for Louis Jadot Pommard are harvested by hand, at just the right point of ripeness, to preserve their freshness and varietal character. Then, a double process of manual selection and destemming is carried out. Fermentation takes place in open vats - stainless steel and wooden - for 3 to 4 weeks. Daily pigeage is carried out to gently extract colour, tannins and complexity. Ageing is extended by 18 months in oak barrels, with a third of new oak, providing structure and nuances without hiding the soul of the wine.
Taste
On the nose, Louis Jadot Pommard displays intense aromas of ripe cherry, raspberry, blackberry and black plum, accompanied by subtle notes of leather, damp earth, sweet tobacco and oak spices such as vanilla and clove. On the palate, it enters with restrained strength: firm but polished tannins, balanced acidity and a broad texture, enveloping without heaviness. The red fruit reappears, followed by mineral, almost ferrous touches that add depth. The finish is long, with echoes of liquorice, undergrowth and black pepper. A serious wine, with muscle, but also elegance; a true reflection of the Pommard terroir. Ideal with grilled meats, beef tataki, mushrooms or cured cheeses.
