Description
In the heights of Subirats, where the slopes of the region slope towards the sun and the pine forests protect centuries-old vines, the Llopart Microcosmos Rosé is born. At the Can Llopart estate - 500 hectares of forest and organic vineyards at an altitude of 360 metres - viticulture is more a form of respect than a technique. The shallow soil and its natural terrace structure limit the vigour of the vines, forcing them to develop deep roots. This silent struggle against the soil results in intense, low-yielding grapes, but with a crystalline identity.
From this unique relationship with the land comes the idea of a sparkling rosé that reflects the Mediterranean soul without artifice: cheerful, yes, but with an underlying seriousness. Made from 60% Monastrell, 20% Garnacha and 20% Pinot Noir, Llopart Microcosmos Rosé is the Llopart family's bold response to an often undervalued category. They have opted for a rosé with structure, natural freshness and long ageing. No shortcuts.
Winemaking
The grapes are harvested by hand from selected plots. The grapes that will give life to Llopart Microcosmos Rosé are pressed whole after a brief cold maceration, which provides the delicate pink tone and a first aromatic sketch without extracting excess tannin. Fermentation is carried out at low temperature, preserving the freshest and most subtle profile of each variety.
At the beginning of the following year, the final blend of Llopart Microcosmos Rosé is bottled to start the second fermentation. The bottles are then placed in a cellar, where they will rest for more than 24 months in complete darkness, at a constant temperature and humidity. During this time, the wine gains finesse, complexity and an elegant bubble. After ageing, the wine is disgorged, a Brut dosage is added and it is closed with the final cork. Nothing more.
Taste
Llopart Microcosmos Rosé has a pale pink colour, between onion skin and light salmon, clean and bright. The bubbles are fine and persistent. The nose is austere but expressive: wild raspberries, grapefruit peel, dried flowers and a mineral background.
On the palate, the Llopart Microcosmos Rosé stands out for its tension: a precise, almost cutting acidity accompanies flavours of sour cherry, candied lemon and a subtle note of brioche. The finish is dry, saline and very long. It does not seek to impress with sweetness or volume, but with verticality and freshness. A rosé for those who value elegance over noise.
