Description
Leflaive Pouilly-Fuissé is a sublime expression of biodynamic viticulture in the Burgundy region. This white wine, made exclusively from Chardonnay, comes from an area of 2.16 hectares of chalky clay soils, which are often shallow, contributing to the wine's complexity and minerality. The blend of 12 plots is situated around La Roche de Solutré, with a southeast to southwest exposure, capturing the essence of the terroir in each bottle.
Winemaking
The winemaking of Leflaive Pouilly-Fuissé begins with a completely manual harvest, followed by daily transport of the musts to the cellar located in Puligny-Montrachet for fermentation and ageing. Vinification takes place in vats, and the ageing process lasts 15 to 16 months. Pressing is pneumatic, long and gentle, with a 24-hour decanting process before racking. Fermentations are carried out with 25% in cement eggs and 75% in oak barrels, 15% of which are new. After 12 months in barrels, the wine is aged for a further 6 months in tanks, where it is prepared for bottling. The wine is clarified with a natural fining agent based on fish glue and lightly filtered.
Taste
The taste of Leflaive Pouilly-Fuissé is remarkably well-balanced, bordering on perfection in every aspect of winemaking. It is characterised by a buttery texture and notes of vanilla, complemented by a citrus freshness. On the palate, flavours of peach and apricot unfold, followed by an aftertaste reminiscent of almonds and toast. The presence of minerals, lemon and even mint adds a complexity that invites reflection and sensory delight.
