Description
La Maison Romane Gevrey-Chambertin La Justice was born from Oronce de Beler 's desire to restore the purest and most sensitive aspects of Burgundy's viticulture. A former publisher turned winemaker, Oronce decided to settle in Vosne Romanée, to adopt animal traction with Percheron horses and to vinify with a minimum of intervention. With his cuvée "La Justice", he pays homage to a unique plot in the village of Gevrey-Chambertin, on deep soils of clay loams and fossil limestone. Here, the Pinot Noir ripens slowly thanks to a cool climate with good thermal amplitude, which favours the expression of precise fruit and a marked mineral character. Its philosophy: let the earth speak without filters.
Winemaking
La Maison Romane Gevrey-Chambertin La Justice is harvested by hand, with strict selection in the vineyard. The grapes are vinified whole, without destemming, starting spontaneous fermentation with indigenous yeasts. The entire process is carried out by gravity, without pumping, in order to preserve the wine's natural energy. Maceration is prolonged, but without excessive extraction. The wine is aged for 15 to 19 months in used French oak barrels, without filtration or aggressive fining. Finally, La Maison Romane Gevrey-Chambertin La Justice is bottled with minimal sulphites, in search of an authentic and raw expression of the terroir.
Taste
On the nose, La Maison Romane Gevrey-Chambertin La Justice unfolds with aromas of sour cherry, ripe raspberry and wild blackberry, over an earthy background of undergrowth, dried leaf and black tea. With aeration, subtle notes of sweet spice, bitter cocoa and blond tobacco appear. The palate is agile and taut, with fine tannins and a silky texture. The acidity is lively, supporting a crisp red fruit profile, accompanied by a mineral and spicy echo. The finish is long, fresh, with a shady, saline aftertaste. A Gevrey Chambertin with an elegant rather than muscular spirit that finds its strength in subtlety and verticality. For palates that value the truth of the soil rather than opulence.
