La Clave is a red wine produced by Bodega y Viñedos Raúl Pérez in the Bierzo Denomination of Origin, mainly with the Mencía grape variety, complemented with Tempranillo and Syrah.
These vineyards where these grapes come from are located in the town of Valtuille de Abajo, which were planted on clay-limestone soils.
The grapes are harvested by hand at the optimum point of ripeness. On arrival at the winery, the grapes are partially separated from the stalks and placed in 500-litre open wooden vats and tanks with indigenous yeasts, where the fermentation of each variety takes place. After about 30 days of maceration with periodic punching down, the wine is transferred to second year French oak barrels, where the red wine remains for 12 months before being bottled without filtering or fining.
In the mouth, it is a wine that stands out for its freshness and balance, with a predominance of fruity and floral aromas and hints of wood from its ageing.
The rough tannins and its fine acidity make this Raúl Pérez red wine an austere and deep wine, with a long and persistent finish.

La Clave is made following a totally natural winemaking process, so that the wine produced reflects the character of the vineyard.
This red wine is ideal as an accompaniment to main dishes based on grilled red meat and roasts, as well as with game and starters such as Iberian cured meats and cured cheese boards.
