Description
In the heart of Jerez, where the albariza reflects the sunlight like a white mirror, one of the most unique expressions of Andalusian wine is born: Hidalgo Marqués de Rodil Especial Palo Cortado. Hidalgo, a winery founded in 1792, has preserved since 1860 a mythical solera of Palo Cortado, a legendary category for its rarity and elegance. This wine is not made, it happens. It arises from a meticulous selection, when a wine destined to be fino naturally loses its flor and begins to show structure and depth. At that moment, the foreman - an essential figure in this house - decides to set it aside, to trust in its evolution, to let time do its thing. The Palomino grape, grown on albariza soils in an Atlantic climate, gives the dry, vertical character, which then multiplies over the years.
Winemaking
Hidalgo Marqués de Rodil Especial Palo Cortado combines two systems: the traditional Criaderas and Solera, and the Añadas, a double ageing process that adds complexity and layers of depth. Fermentation is spontaneous, in steel, and then the wine is racked into American oak casks, where it remains for years - sometimes decades - ageing under oxidative ageing. The flower, if it ever existed, soon disappears, giving way to concentration, slow oxidation, silent transformation.
Taste
It shines in the glass with a tone between amber and mahogany. On the nose, Hidalgo Marqués de Rodil Especial Palo Cortado opens with notes of toasted hazelnut, bitter almond, dried orange peel, old wood and a lingering salinity. There are echoes of fine leather, blond tobacco, and a background of dried fruit. On the palate, Hidalgo Marqués de Rodil Especial Palo Cortado is dry, fresh, enveloping, with a firm body and a long, almost saline finish that leaves memories of dried fruits, mild spices and wood polished by time. A wine of enormous gastronomic versatility: it goes with everything from mushrooms and blue fish to roasted vegetables and cured cheeses. Also, on its own, in silence, as a luxury that needs no words.
