The 2023 Savagnin Ouillé comes from 60% old vines and 40% new vines on Lias marl soils, and it matured mostly in foudre and 500-liter barrels and a six months in stainless steel. It's clean, varietal and fresh, with very good acidity and citrus notes, textured, elegant and perfumed, with fine minerality and a serious profile, with 13% alcohol. 10,000 bottles were produced. It's truly delicious and very nicely priced.

Description
In the heart of the Jura, where the marly soils speak with an ancient voice, Raphaël Fumey and Adeline Chatelain decided to rewrite the Savagnin narrative. Instead of letting it evolve under a veil of flor - as the tradition of vin jaune dictates - they opted for "ouillé" ageing: filling the barrels to prevent oxidation. A deliberate and courageous choice, resulting in a wine of crystalline purity, without masks.
The grapes that give life to Fumey Chatelain Savagnin Ouillé come from young vines planted on grey marl, a rich geology that gives the wine its austere, mineral character. The continental climate, cool but sunny, allows the wine to retain a vibrant acidity even in warm vintages. Here, youth and altitude combine to offer tension, clarity and energy.
Winemaking
Fumey Chatelain Savagnin Ouillé is vinified by direct pressing and ferments spontaneously in 500-litre foudres and barrels, where it rests for 12 months. It then spends 6 months in stainless steel, refining its expression. No battonage or artifice: just time, silence and precision. Production is limited to 10,000 bottles, reflecting a respectful, artisanal approach.
Taste
From the first sip, Fumey Chatelain Savagnin Ouillé is sharp and electric. Aromas of lemon zest, fresh apricot and acacia flowers unfold slowly, supported by a firm structure. On the palate, saline texture, cutting acidity and a hint of bitter almond draw a dry, lingering profile. The finish is long, taut and salivating, leaving a sensation of wet stone and infinite freshness. A wine that does not seek to please, but to excite. Jura at its most direct, pure and cerebral.
