Description
The story of François Carillon Bourgogne Chardonnay stems from François Carillon' s desire to capture the essence of the Burgundian terroir without artifice. From Puligny Montrachet and Meursault, where the family has been growing Chardonnay since the 16th century, he selects three plots of clay-limestone soils and vines between 33 and 59 years old. Their philosophy is clear: minimal intervention, respect for the vines and a winemaking process that lets the land do the talking. In a particularly warm vintage, he took the decision to reduce the dose of sulphites to a minimum, trusting in the purity of the fruit. The result was a vibrant wine of unexpected clarity that reinforced his commitment to oenological honesty. Under the Bourgogne blanc appellation, this cuvée is a tribute to the great whites of the Côte de Beaune, but from an accessible, frank and precise perspective.
Winemaking
The grapes for François Carillon Bourgogne Chardonnay are harvested by hand and gently pressed. The must is cold decanted before fermenting in French oak barrels, where the wine rests for about a year. During this time, a light bâtonnage is applied to add volume without masking the natural tension of the Chardonnay. The total ageing is extended to about 16 months before bottling. François Carillon avoids excessive use of oak: he is looking for structure, not make-up. In this way, the wine retains its energy and reveals the mineral imprint of the soil.
Taste
Bright golden colour. On the nose, François Carillon Bourgogne Chardonnay displays notes of ripe pear, yellow peach and lime zest, on a mineral background with iodine echoes. The palate is juicy, with a broad entry and creamy texture. The precise acidity gives it drive and freshness. Reminiscences of white fruit, hints of citrus, subtle vanilla and a delicate salinity emerge. The finish is tense, long, marked by limestone and understated elegance. François Carillon Bourgogne Chardonnay is a Burgundian white that balances fruit, nerve and minerality with a charming purity.
