There are two yearly bottlings of the NV Fino Viejo Tradición, one in the spring and another one in the autumn, sometimes marked with the month and sometimes with the season. This one specified Primavera 2016 (spring 2016) must have been recently bottled (or even just before bottling). I had three different bottlings to taste side by side, which is really interesting, as these wines, like all, develop in bottle contrary to what it was said before - that they spoiled in bottle and had to be drunk ASAP. This is the freshest of the three, and the flor is still there, very tender, with more citric aromas and notes reminiscent of the fresh yeasts - the 'flor'. The difference between 'sacas' are always subtle, and at the end of the day the differences between wines is also very much marked by how long ago the wine was bottled. So I decided to go back to grouping the different bottlings under one same wine and just specify the lot/saca/bottling date in the tasting note. This recent one reminded me a lot of the other when tasted young, with a character of an old, traditional fino; not shy of showing a dark golden color or an expressive, slightly oxidative nose with plenty of influence of the yeasts, under which it has been for ten to 12 years. The character has the holy trinity of fino, chalk, esparto grass and brine. This has become one of the most consistent and best old Finos around. They always bottle some 3,000 bottles.

In the heart of the historic centre of Jerez, Fino Tradición was born as a declaration of principles: respect for the legacy and ambition to transcend it. Joaquín Rivero, founder of Bodegas Tradición, was committed to rescuing old soleras and preserving almost extinct styles. His alliance with veteran foreman Pepe Blandino was key to creating a fino that challenged the established: older, more complex, deeper. The Palomino grape, grown in albariza soils and caressed by the Atlantic breeze, is the basis of this wine that honours its origins with obsessive precision.

Winemaking

Fino Tradition is made from the Palomino yolk must, fermented and fortified to 15% vol. to allow the development of the "flor" - that natural yeast that protects and imprints character. This is where the rarity begins: while most finos are aged for 3 to 5 years, Fino Tradición spends more than 10 years under flor, in American oak butts, in a solera system that is only bottled twice a year. The annual production is just under 3,900 bottles, which makes each one an almost handcrafted piece of work.

Flavour

To the eye, Fino Tradición is golden, deeper than usual for a fino. On the nose, it displays remarkable complexity: raw almond, dry hay, green olive, ripe apple, hints of bakery and a saline background reminiscent of the sea. On the palate, it is sharp and enveloping. The entry is dry and lively, with a crisp salinity, hints of aged yeast, lemon zest and nuts. The acidity is firm but integrated, lengthening the finish into a mineral echo, with hints of umami, subtle toast and elegant bitterness.

Fino Tradición does not seek to please easily: it is austere, powerful, profoundly dry, almost intellectual. A fino for purists, it redefines the boundaries of style without losing its essence.
