Description
With Fabien Coche, there is no pretence, but rather a deeply Burgundian conviction: to let the vineyard speak for itself with as little interference as possible. The domaine, which has been rooted in Meursault for several generations, now operates under a philosophy of absolute respect for the land, culminating in certified organic cultivation. This is not a cosmetic gesture, but a choice consistent with a house that sees wine as a reflection of its origins. Fabien Coche Monthélie 1er Cru Les Barbières, made exclusively from Pinot Noir, is produced on a well-exposed hillside in the heart of the Côte de Beaune, within the A.O.C. Monthélie, on calcareous and clayey soils that imbue the wine with that exquisite blend of finesse, tension and quiet depth.
Winemaking
The grapes are harvested by hand, with careful selection from the moment they arrive at the winery. In Fabien Coche’s Monthélie 1er Cru Les Barbières, fermentation involves 30% whole bunches – a significant decision, as the aim here is not to create harshness, but to enhance the bouquet, add tension and bring greater depth to the wine as a whole. The wine is then aged for 18 months in French oak barrels, with 30 per cent new oak. No excess, no artifice: the ageing process serves the terroir, refining the wine’s character and honing its structure without masking the identity of the climat.
Taste
On the nose,Fabien Coche’s Monthélie 1er Cru Les Barbières is a Pinot Noir of refined and aristocratic character—not exuberant, but restrained, fresh and deeply elegant. First come red cherry, raspberry and a hint of redcurrant, followed by delicate flowers, peony and violet, with an underlying chalky, almost stony note that lends it a sense of gravitas. On the palate, it is silky on entry but immediately reveals a lively edge. The red fruit dances on a precise acidity; the tannins are extremely fine, almost powdery; and the wine stretches out with a brilliant, airy freshness, very much characteristic of a limestone hillside. The finish leaves a subtle hint of spice, a floral echo and that sensation of transparency, energy and refinement that distinguishes the truly great Burgundy wines.
